Amaranth Popcorn- A Healthy Alternative

There is a healthy, delicious alternative to the traditional popcorn eaten by many people-amaranth popcorn. Amaranth can be found in health food stores as a grain and in a variety of products ranging from flour, bread crumbs, starch, powder, snacks etc. People who eat a gluten-free, wheat-free, diary-free diets, or are just looking for a great way to create a well-rounded, nutritious diet should give amaranth a try. It is very high in dietary fiber, protein, iron, calcium, and has a large amount of the amino acid lysine.

Amaranth Popcorn:

From Seeds of Change: The Living Treasure

Heat a cast-iron skillet or wok for a couple of minutes. Pour in enough amaranth to cover the bottom of the skillet no more than 1/8 inch deep. Cover the pot, and within 10 seconds amaranth will start to pop. Move the pan to shake the grain, and stir to keep it from burning. Within a minute, all the amaranth should be popped. Quickly pour it off and repeat the process. If you should end up with any unpopped seeds, you can pour the whole mix through a strainer, and the unpopped seeds will fall through. You can then add butter and salt to taste if desired.

This is a wonderful nutty and nutritional breakfast food, excellent for camping or traveling. In South America, it is often mixed with molasses or honey and pressed to form a candy.

Popped Amaranth mixed into organic yogurt is one of the most simple but also very tasty recipis.

Bed Bath & Beyound has now a line of organic cotton sheets and pillow cases

Turkey and Egypt are the countries Europe gets most of its organic cotton from. The product line Simply Organic sold by Bed Bath & Beyond is made in Turkey. We don't have any information how the cotton is certified and if anybody tested how much toxins you will find in it. We also have no idea what dye was used and how it is fixated on the cotton. We recommend the the most natural looking color. Please let us know if you have any heath problems using this product or if you have any data on what chemicals are used and how the cotton is certified. Here the link to their organic cotton Products.

Thanks, Rene

Eco Yoga Mat

These additives off-gas and leach during product use, and are also known to seep into groundwater once the product goes to landfill.
PVC itself does not biodegrade, and it remains on the shelf, in the environment, or in the landfill. Sometimes landfills catch on fire, and then the PVC releases dioxin, hydrochloric acid, and other toxins. PVC is extremely difficult to recycle, which is why so little of it is recaptured.

Rubber mats are an alternative but they smell strong and wheigh more then the PVC bassed mats. I discovered a nontoxic mat from Gaiam , but found that they had only eliminated the toxic additives, but not the PVC.

EcoYoga developed a mat made of natural rubber and jute. It has no synthetic additives or plastic components and is completely compostable.

EcoYoga mat currently seems to be the greenest option available for those who wish to practice on a sticky mat. They can be bought online at these 2 places:

I also want to point out the yoga mat bag from Crescent Moon as a practical but not to pricy bag:
